Spirit Blending Experience at Fairfax Distillery, North Yorkshire

Located in the picturesque village of Colton near York, Fairfax Distillery offers a truly unique spirit blending experience inside the historic Old Sun Inn pub. This fun and hands-on session is perfect for gin, rum and vodka lovers looking to create something truly personal — and delicious.

The experience begins in the Distilling Room, where guests are introduced to Mary, the distillery’s stunning copper still. Here, they’ll discover the fascinating history of distilling, including the different styles and methods used across the spirits industry.

Next, it’s on to the Blending Room, where the creativity begins. Guests are guided through an exciting collection of over 70 flavours — from juicy fruits and fragrant flowers to warming spices and fresh herbs. They’ll then choose around a dozen of their favourite flavours and use them to craft their own recipes for three personalised spirits: one gin, one rum and one vodka.

Once the drinks are blended to perfection, it’s time to head to the bar and serve them up with a mixer and garnish of choice. A delicious grazing board is also included — ideal for nibbling on between sips (dietary requirements can be catered for).

To make the experience even more special, guests can choose their favourite creation and, for an additional cost, take home a 70cl bottle of their unique blend complete with a personalised label.

The spirit blending experience at Fairfax Distillery is relaxed, interactive and full of character — expect plenty of laughs, friendly chat, and a refreshing break from the usual background music. The Spirit Blending Distillery Gift Experience at Fairfax Distillery near York is run by Ashley & Kelly McCarthy

With over two decades of award-winning hospitality experience at the helm of Ye Old Sun Inn in Colton, Ashley and Kelly McCarthy know a thing or two about crafting unforgettable experiences. Renowned for their dedication to top-tier service, locally sourced ingredients, and culinary creativity, the husband-and-wife duo have built a loyal following – and now they’ve channelled all that know-how into something a little more spirited.

Fairfax Distillery was born out of curiosity, creativity, and a pinch of pandemic-induced reinvention. Kelly’s long-standing fascination with the distilling process led her to take a course back in 2019, simply to better understand the drinks she was serving. Little did she know it would soon become a full-blown passion project.

Meanwhile, Ashley – a trained chef with a flair for chocolate artistry and a few TV appearances under his apron – brought his innovative streak to the mix. When hospitality ground to a halt in 2020, the couple saw an opportunity to try something new. Starting small, they tested their handcrafted gin and rum on unsuspecting friends (no pressure!), all badged under a brand-new name: Fairfax. The verdict? Glowing reviews all round.

Fast forward to September 2022, and Fairfax Distillery began full-time production from a bespoke setup within the historic Ye Old Sun Inn. Every bottle is a reflection of their deep-rooted passion for quality, creativity, and Yorkshire spirit.
